No cocktails this week…let them eat cake!

It’s been a while since my last post! and I have been experiencing withdrawal symptoms (asides from guilt) from not being able to post any recipes. Due to a health issue, the Doctor recommended that I stop any kind of alcohol intake for a few weeks, not sure if he ignored me when I was telling him about this blog or if he’s just testing my patience….

It has been challenging, specially during the weekend because that’s when I would mix the most, and so the cravings for a cocktail got weird! I would crave anything from an simple old fashioned with an orange twist, to a decadent mud slide with pieces of rum truffles on top and whipped cream, but after the first two weeks the cravings for cocktails stopped and now there is only one thing in my mind. “Pink Champagne”.

yup! can’t think of anything more delicious than a cold glass of pink and fruity bubbles, now if you want to get fancy you can add 1oz of Chambord and a berry of your choice and voila!  you got yourself a “Champagne Royale”

for now I will have to stick to Italian soda and play pretend but come next week it will be nothing but Champagne Royale and cake…yes! did I mention that is the perfect pairing? no? well get yourself a glass of pink champagne, a vintage looking hand fan and start shouting…let them eat cake! (try it it’s fun)

 

A Candied Pinky!

I know! this is a pretty girly drink, but we all need one of these from time to time,for those of you boys that don’t think you will drink this, it’s cool…you might need to make a girl happy.

Yes one day when you get lost in one of those days when she is so pissed and cranky , that she won’t even let you breath near her, yes my friend! this will save your life, so you better memorize this recipe, and as usual I have baptized this drink, yup you guessed it!

A Candied Pinky (imagine ordering that at a bar ha!)

  • 3 oz of Cotton Candy liqueur
  • 3 oz of Vodka of your choice
  • 6 oz of condensed milk
  • 1 shot of Chambord

shake with ice and garnish with anything bright and colorful, think of it as a cupcake with a punch.

My all American Cocktail

 

Looking at my high school years, I think I have traced back my interest or love for cocktails  to a very specific moment in  the 9th grade. I had just moved from a big city in Mexico to a big City in the U.S. and not having many friends, in my head, the obvious solution was to become a book worm!

While reading “The Great Gatsby” by F. Scott Fitzgerald, there was something about the character Daisy Buchanan and her “cheerful snobbery” that I constantly associated to Mint Juleps, and I think that’s when I started being curious about what was so special about  bourbon mixed with mint and sugar!

When I turned 21 that was the first drink I wanted to try, and boy I was not disappointed!

The recipe is quite simple, but as usual I have to make drinks my way so here is how I drink it!

I make a paste out of muddled mint and sugar and mix it with a shot of Makers Mark, I usually let it sit in a bowl for a bout half an hour just so that it gets that srong minty taste.

Then its Mixing Time! in a shaker I add 1tbs of the paste 2 shots of Makers Mark, instead of sugar I use agave nectar, ice, a twist of lemon and some chunks of fresh fruit, that’s how tell myself I’m eating my servings of fruits and veggies…I know, I know!

Serve in a frosted glass and enjoy!!, It is simple and delicious

 

 

“La Pera Tequilera”

I had one of the craziest , longest days today! and the only thing that makes me feel better about whatever bad karma it is that I’m paying for, is mixing me a pretty drink!

So there I was, not a lot of measurement and science was put into this drink, I pretty much eyeballed everything into equal parts, but it was heavenly!! I used some Tequila, Pear liqueur, and some Agavero (sweet agave liqueur that it’s said to be an aphrodisiac ::wink wink::)

Shake it with some ice, and muddle some chunks of fresh pears with a pinch of sea salt, add the juice of half a lemon and VOILA!!  after a few sips of this potion I had forgotten what the words email, and conference call meant. seriously give it a try!

Spiced Pina Colada

Another hot summer day! after a long week all I could think of was about having a fresh and fruity cocktail by the pool, so I took out my bathing suit and my blender, and whipped up some nice and Spiced Pina Colada.

Usually these babies pack around 700 calories which is more than a burger, so I tried to keep it low cal, but packed with punch and flavor, after all it’s bathing suit season! so here we go:

Spiced Pina Colada:

  • 2 shots of  Sailor Jerry spiced rum (or any other spiced rum, however this one is my favorite)
  • 2 cups of ripe pineapple chunks
  • 1 TBS Splenda/Stevia
  • 1/2 can of Light coconut milk
  • cinnamon to garnish
  • Lots of Ice!

Blend the rum, the pineapple, the ice and the Splenda until it acquires a smooth texture, mix the coconut milk with some ice in a cocktail shaker, and shake until frothy, mix both parts  in a tall  glass and garnish with some cinnamon.

It takes less than 5 minutes, it’s fresh and it cuts all the unnecessary calories from the mixers, but be careful, these taste like smoothies, but will hit you like a truck full of rocks if you have one too many!

 

Grandma’s remedy for a cold

Nope, not a cocktail! while most grannies would recommend chicken soup and ginger ale, my granny kicked butt!  growing up I remember she would swear that a shot of Mezcal or Tequila , along with a good body rub with Vaporub could cure the worst cold.

Mezcal and Tequila are pretty similar in the sense that they both come from Agave, howeverTequila can only come from Agave grown in a certain area of Jalisco,(Mexico) also the processes are different.To make Tequila the heart of the agave is steamed, while for Mezcal is roasted giving it a delicious smoky taste…yum!

So now its time to let the healing process begin, I caught a summer cold and I feel like I got ran over by a truck, so CHEERS!

I can make anything skinny…except myself!

Seriously! It feels like I have been on an eternal diet, but it wasn’t until last year that I was getting ready to tie the knot and fit in a white dress, that I started dreading I would  look like a giant tampon, so I started following some serious dieting!

If you take bread from my diet…it’s fine, rice, chocolate, cake, sugar, I am seriously cool with that! but if you tell me I cant drink a cocktail, then I have a problem!

And so I started making skinny versions of almost all my favorite foods, and of course my drinks!!  and so I want to share some of these recipes with you, and here goes my favorite

Slimmer Sandy Mojito

  • 1 shot Bacardi white rum (60 cal)
  • 2 limes juice (20 cal)
  • 1 Packet of splenda (0 Cal) if you prefer you can add blue agave syrup (60 cal)
  • Pinch of Salt
  • Sparkling water (0 cal)
  • Muddled mint (0 cal)
  • Stick of fresh sugar cane (15 cal)

That is a grand total of 95 calories or 115 if you prefer your cocktail au naturel! and just in case you are interested in knowing why I can’t make myself skinny , well  It’s because I am too lazy to work out!
